Chipotle Chicken Burrito Bowl


I am a woman of all trades, so it comes to no surprise that I am able to create a scrumptious meal, healthy too.  So I present to you my version of a chipotle chicken burrito bowl, it's easy to make that's packed with flavors. 

What you will need:


  • Dice up you onion and peppers
  • Heat up your pan with olive oil (any cooking oil will do) and place the onions and peppers and let it cook
  • While the onions and peppers are cooking, take your rotisserie chicken and shred it apart. All you want is the meat, leave out the skin and bones. And since your rotisserie chicken has already been cooked, no need to season it. 
  • Place the chicken into the pan and then mix it with your onions and peppers. 
  • Add the chipotle peppers (remember these peppers are hot so had to your liking)
  • If you want to create more of a sauce you can add some chicken stock, this will make a good gravy. 
  • While your chicken is being cooked, cook either your brown rice or quinoa, follow directions on the package
  • You can also heat up your refried black beans, I find Amy's Organic refried black beans to be the best, it's just filled with flavors and easy to heat up. 
  • While everything is being cooked, prepare your garnishes by slicing up some avocados and cilantro.
  • When everything is done cooking, add either your brown rice or quinoa to your bowl, then your shredded chicken, and garnish it up with refried black beans, avocado, and cilantro. 
  • I especially enjoy it when I squeeze in some lime and drizzle Cholula sauce on it, gives it a nice acidic element to the dish.

So there you have it, no need to run to Chipotle to get your burrito bowl fix or hear the person behind the counter tell you guacamole cost extra, you can make your own burrito bowl and add as much of any and everything you want, ( I know I always feel a little judged when I ask for extra chicken or guacamole)...this meal is most definitely a lot healthier and definitely tastier.
